This colorful grab’n go salad is packed with beans, beets and greens, and it looks great when you pack it in a mason jar and bring it for lunch.
I like to do food prepping when we are busy, because that means we get healthy meals even though we don’t have much time to cook. You can easily prepare salads in mason jars and keep them in the fridge for up to 4 days.
How to layer your mason jar
For this salad you start with your favorite dressing (you can also have this in a separate glas), then cauliflower, beets, pomegranate, edamame beans and last your microgreens.
You want to add the leafy greens last so they don’t get soggy.
In this salad I don’t have grains, but it could have been rice, bulgur or couscous.
I like to have olive oil with my salads because it doesn’t take away the flavor of the vegetables.

Here is a little bit about the powerhouses in this salad.
Beets
Beets are a nutritious vegetable that are rich in vitaminC potassium, magnesium and folate.

For this salad you need
2 cups of riced cauliflower
2 oz of microgreens
2 cups of frozen edamame beans
1 small beet
1 cup pomegranate
Rice the cauliflower, grate the beets and cut the microgreens
Blanch the frozen edamame beans a couple minutes and let them drip off in a strainer.
Mix everything in a bowel, or pack your mason jars.
Last, mix in the pomegranate.
