I love soup season, and this this creamy cilantro microgreens soup is packed with flavor and nutrients, thanks to the combination of potatoes, cilantro microgreens, chicken broth, and coconut milk. I am super happy with how it turned out.
Using cilantro microgreens instead of mature cilantro leaves gives the soup a more delicate and aromatic cilantro flavor.

To make this delicious Creamy Cilantro Microgreens Soup you will need:
1 small onion, chopped
2 cloves of garlic, minced
4 cups of chicken broth
4 cups of peeled and diced potatoes
1 can (13.5 oz) of coconut milk
2 cups of cilantro microgreens (reserve some for garnish)
Salt and pepper to taste
1 pinch of chili pepper flakes (optional, for a little heat)
2 tbsp of coconut oil
Heat the coconut oil in a large pot over medium heat. Add the chopped onions and garlic, and sauté for about 2-3 minutes until they become translucent.
Add the diced potatoes to the pot and continue to sauté for another 5 minutes, stirring occasionally.
Pour in the chicken broth, and if you choose to use chili pepper flakes, add them now. Bring the mixture to a boil.
Reduce the heat to low, cover the pot, and let the soup simmer for about 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.
Stir in the coconut milk and let the soup simmer for an additional 10 – 15 minutes, allowing the flavors to meld. Mix in most of the cilantro microgreens, reserving some for garnish.
Carefully transfer the hot soup to a blender (you might have to do it in batches), and blend until smooth.
Season the soup with salt and pepper to taste. Adjust the seasoning according to your preferences.
Serve the creamy potato and cilantro microgreens soup hot, garnished with fresh cilantro microgreens.
To this soup we had leftover chicken and rice.
