Creamy Cilantro Microgreens Soup

I love soup season, and this this creamy cilantro microgreens soup is packed with flavor and nutrients, thanks to the combination of potatoes, cilantro microgreens, chicken broth, and coconut milk. I am super happy with how it turned out.
Using cilantro microgreens instead of mature cilantro leaves gives the soup a more delicate and aromatic cilantro flavor.

Potatoes

Organic potatoes are a nutritional powerhouse with several noteworthy benefits. They are a rich source of essential nutrients, such as vitamin C, which supports the immune system, and vitamin B6, vital for brain function and metabolism.

Potatoes also provide a high amount of dietary fiber, which supports the digestive health and helps maintain steady blood sugar levels.

Potatoes have gotten a reputation of being less healthy because of their high amount of starch. However, when they are cooked and allowed to cool, this resistance starch undergoes a beneficial transformation, becoming a prebiotic that feeds the healthy gut bacteria. This phenomenon is known to promote a healthier gastrointestinal system, improve insulin sensitivity, and assist in weight management. Therefore, incorporating cooled, organic potatoes into your meals will help support both better digestion as well as overall well-being.

Cilantro Microgreens

Cilantro microgreens are young versions of the well-known herb cilantro, also called coriander. Although they might be small in size, but they are packed with flavor and are often used to garnish dishes, but they offer more than just a burst of taste.
That are also nutritional powerhouses packed with essential nutrients such as vitamins A, C, and K, as well as minerals like calcium and potassium.

They play an important role in the detox processes in the body. They contain compounds such as coriandrin, quercetin, and various polyphenols that helps remove heavy metals like lead and mercury from the bloodstream and excrete them from the body. Additionally, cilantro microgreens are great when it comes to liver support and reduced oxidative stress, due the hight amount of antioxidants and phytonutrients.

Chicken broth

Homemade chicken broth, made from free range organic chickens, is known for its numerous health benefits. As it simmers, it extracts essential nutrients from chicken bones, which gives you a flavorful and nutrient-rich liquid. Chicken broth is rich in collagen, which supports skin, hair, and joint health. It also contains amino acids like proline and glycine which is good for your digestion as well as reducing inflammation. The minerals found in homemade chicken broth, such as calcium, magnesium, and phosphorus, contribute to bone health and overall vitality.

To make this delicious Creamy Cilantro Microgreens Soup you will need:

1 small onion, chopped
2 cloves of garlic, minced
4 cups of chicken broth
4 cups of peeled and diced potatoes
1 can (13.5 oz) of coconut milk
2 cups of cilantro microgreens (reserve some for garnish)
Salt and pepper to taste
1 pinch of chili pepper flakes (optional, for a little heat)
2 tbsp of coconut oil

Heat the coconut oil in a large pot over medium heat. Add the chopped onions and garlic, and sauté for about 2-3 minutes until they become translucent.

Add the diced potatoes to the pot and continue to sauté for another 5 minutes, stirring occasionally.

Pour in the chicken broth, and if you choose to use chili pepper flakes, add them now. Bring the mixture to a boil.

Reduce the heat to low, cover the pot, and let the soup simmer for about 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.

Stir in the coconut milk and let the soup simmer for an additional 10 – 15 minutes, allowing the flavors to meld. Mix in most of the cilantro microgreens, reserving some for garnish.

Carefully transfer the hot soup to a blender (you might have to do it in batches), and blend until smooth.

Season the soup with salt and pepper to taste. Adjust the seasoning according to your preferences.

Serve the creamy potato and cilantro microgreens soup hot, garnished with fresh cilantro microgreens.
To this soup we had leftover chicken and rice.
