I love watermelon, but. we are only two people in this household, so if I didn’t pre cut the whole thing, the last bit always got thrown away. Then I came across some different Watermelon recipes on pintrest, and thought that was a really great way of using it. That resulted in different Watermelon salads, and relish.
This Watermelon relish goes really well with every type of meat, or as a topping on a green summer salad.
Every bite has a significant level of vitamin A, B6 and C. On top of that, it contains amino acids, and lots of lycopene, which is a phytonutrient, and plays a huge role in our cell health.
It’s a colorful side dish, which makes it very inviting for your eyes and taste buds, and I’m telling you, it is so addictive!
- 2 – 3 slice of watermelon cut in small squares
- 1/2 red onion diced
- 2 cloves of garlic, minced
- 1 huge bunch of fresh mint
- 1- 2 tbsp olive oil
- Pepper to your taste
Mix everything and store it in the fridge over night
