Super Simpel Broccoli Salad

Broccoli is one of those vegetables you either love or hate! Either way It is a powerhouse full of vitamins, minerals, antioxidants and fibers, and can be served in many different ways.
We use it in stir fry, boiled, grilled, in smoothies and juices, and of course this amazing Broccoli Salad.

This side salad goes really well with almost any type of meat, but can also be enjoyed for lunch with a pice of Paleo Bread!

All you need is:

1 broccoli head
1/2 red onion
1 pack of bacon
2 handful of sunflower seeds  or nuts
Salt and pepper to your taste

Dressing:
8 tbsp of organic mayonnaise
1-2 tbsp of appelcider vinegar
2 tbsp of mustard
1/2 tsp of original stevia, powder form

Mix the dressing, and let it sit while prepping the rest.

Cut the stim of the broccoli, as we only use the top. Break this into small pieces.
In a bowl, add the broccoli pieces and pour some boiling water over.
Leave it for 1-2 minutes so the color gets darker, before rinsing it in cold water and dry it.

Fry the bacon till it’s well done. Put it onto some paper towel and leave it to dry and cool off.
Cut it into small pieces.

Chop the red onion to your liking I always make them very small.

Mix all the dry ingredients in a bowl and add the dressing slowly – you don’t want the salad to have to soak in dressing 🙂
If you want you can add 1-2 handfull of raisins or cranberries too
