Super Easy Crunchy Granola

Adding nuts and seeds, or a homemade Granola to your yoghurt or smoothie in the morning, just make a huge difference. In fact it is very important for your digestion that you actually have something to chew on at every meal!
Usually when a recipe calls for syrup, I always use Fiber Syrup from Sukrin, because it is a natural sweetener which does not affect your blood sugar.
You can exchange some of the nuts and/or seeds with dried fruit if you like.
I prefer to add different types of fruit and berry myself as we can use whatever is in season.

All you need is:

2 cups of glutenfree rolled oats
1/2 cup op pecan pieces
1/2 cup of almond pieces
1/2 cup of pumpkin seeds
1/2 cup of sunflower seeds
5 tbsp fiber syrup
3 large tbsp coconut oil
1 tsp vanilla extract
A little pinch of salt

Mix the coconut oil, fiber syrup and vanilla extract in a bowl. Then add the dry ingredients little by little.
I use my hands as they help melt the coconut oil and it is the easiest to use 🙂
It will be a really sticky mass when it’s ready to spread on your baking sheet!

Bake at 300 for 10-12 minutes. Depending on your oven, you might want to give them 15 minutes, but this is one of those you just have to watch.
Once the granola has a golden color to it, it’s ready.
Let it cool on the baking sheet for 30 minutes. I store mine in a Mason Jar and keep it in the fridge.
