When I was a child I did NOT like Asparagus! Well, I didn’t like very many vegetables. Carrots and peas, that was that!
Today I really enjoy Asparagus, and like to use them both raw in a salad, wrapped in bacon and grilled, or in a creamy soup like the one I will share with you today.
Asparagus is a really good source of antioxidants, including vitamins C A and E, flavonoids and polyphenols. You also get Glutathione from asparagus! Another great thing is the soluble fibers which helps the friendly bacteria in your gut. When you increase these bacteria you support your Immune system. All together, Antioxidants helps prevent the accumulation of harmful free radicals and may reduce your risk of chronic disease.
For this super easy Asparagus soup, you need:
- 1 lbs of ground chicken
- 2 1/2 cups of chicken broth
- 2 cans of coconut cream (5.4 oz easy)
- salt and pepper to your taste
- 2 batches of asparagus
Clean the asparagus and cut off half of the heads for topping. Heat up the chicken broth and coconut cream, and season it to your taste. We like it mild and creamy tasting. Add the asparagus and let it cook for 20 minutes.
Blend everything and poor it back in the pot for a quick boil before serving.
