Strawberry salsa

I absolutely love love love strawberries, and not only with cream and sugar, or for baking!

Strawberries with cream and sugar was one of my favorites as a child though. Because it was some of the first berries of the summer, and it was a very short season, so we got to eat strawberries with cream as often as we could.

This Strawberry salsa, or salad if you will, is AMAZING and goes with just about everything! It is very refreshing and makes a great eye-catcher on your plate.

To me the summer is kicked off by the strawberry season. In Denmark that is not until June, so I am very happy to have moved to a warmer climate here in Texas where it’s a little earlier.

Strawberries are an excellent source of vitamin C and manganese. They also have a good amount of folate (vitamin B9) and potassium. Because they are mostly water, they are a great supplement to get extra fluid in during the warm summer months!
Once the strawberry season is over, you can exchange the strawberries with watermelon!

For this Strawberry salsa you need

2 lbs strawberries
1/2 red onion
2-3 cloves of garlic
1 cup of mint leaves or lemon balm leaves
2-3 tbsp of olive oil
Ground pepper to your taste

Dice the strawberries to your liking; then chop the red onion and garlic and add everything into a bowl.
Add olive oil and pepper and mix everything well.
Chip the mint or lemon balm leaves and mix with the rest.

Put it in the fridge for an hour before serving.
If you store it in smaller mason jars it can last for days!
