In Between Season Salad

I am so ready for fresh spring crops for my salad. It always feels like April is the In Between Season month when it comes to fresh food!
Today’s salad is a mix of winter crops like Cabbage and Carrots with Spring Six Salad, Radishes and a late summer crop like Zucchini!
They all have one thing in common though – they provide really great nutrients to your body, they are very colorful and they are all a great source of fibers for your digestive system!

Cabbage is very reach in Vitamin K and Vitamin C and have powerful antioxidants like polyphenols and sulfur. Cabbage is also a great source of gut-friendly insoluble fiber, which helps keep the digestive system healty both with beneficial gut bacteria, and supporting a regular bowel movement!

The Radishes is another power house of nutrients. They are very anti inflammatory and anti fungal.
They are packed with Vitamins E, A, C, B6, and K as well as zinc, potassium, phosphorous, magnesium, copper, calcium, iron and manganese. WOW!!
What an immune booster.

Carrots are known for their high amount of beta carotene, fiber, vitamin K1, and potassium. The bright orange color is the beta carotene, an antioxidant that your body converts into vitamin A.
Carrots are also a great source of fiber, which supports your digestive system. It’s especially high in the soluble fiber pectin a dietary fiber, and slows down passage of food through the stomach.

Spring mix is a great source of vitamin A, manganese, Vitamin K, folate, potassium, as well a fibers (again again).
The different lettuces are packed with Phytonutrients, antioxidants, which has been known to help prevent chronic diseases like cancer and heart disease.

Last we have the Zucchini which I did not learn to use until we moved to the US! It is a great source of Vitamin A, C and K, as well as most of the minerals, (potassium, manganese, magnesium and folate.
And like the other ingredients in this salad, it is also high in fibers.
I like to spiralize the Zucchini, both for the salad, but also when we use it as noodles.

Here is I mix the In Between Season Salad!

1/4 cabbage head, shredded
4-6 carrots, shredded
8 big radishes, shredded
1 zucchini, spiralized
2 cups of spring mix lettuce
1/4 cup of pecan pieces

Combine everything in a large bowl.
When served, add spices to your taste, dressing and crumbled goats cheese
You can add any type of meat with this salad
