Curry Cabbage Crock Pot Dish

I’m a huge fan of curry! I’m also a huge fan of making it easy to eat healthy when I’m in a hurry, or don’t really feel like cooking!
Every time we grill a whole chicken, I always make chicken broth of the caucus. Nothing added to the crock pot but caucus and water. That way I get a natural broth I can use for anything.

Today it is all about my all time favorite Curry Cabbage Crock Pot.
I first had this dish more than 10 years ago when my good friend and mentor Ninka Bernadette Mauritson over at Barefoot Autism Warriors shared it on a course I did back then.
Over the years I have simplified and changed it a little to my taste 🙂

This batch gives you enough to freeze for a rainy day!

First fry this in a sauce pan with 1 tbsp of coconut oil:
1-2 inch of fresh ginger chopped finely
3 cloves of garlic chopped finely
1/2 a red onion chopped finely
2-3 tbsp of amino acids
1/2 tsp of chili flakes
Salt, pepper and/or other spices to your taste

Then add:
3 large tsp of green curry paste
2 tsp of curry powder
Mix everything well and let simmer for a couple minutes

Poor the mix into the crock pot and add:
3 cups of chicken broth
1 can of coconut milk
1/2 a cabbage head sliced thin or to your liking

Let everything simmer on high for 3-4 hours
30 minutes before serving I added
3 carrots slices
2 cups of wild rice precooked
1 can of black beans
1/2 a broccoli head diced to your liking

If you like meat like we do, you can add any meat to this Curry Cabbage crock pot dish.
We usually use chicken or ground beef
