When it comes to baking, my skills are definitely used better elsewhere 🙂
However, I really like home baked rolls and bread, and being Gluten Free it’s very hard to find a really yummy bread.
A couple months ago I came across a recipe on a Sandwich bread with Chickpea and Buckwheat flour plus eggs. Being me, I had to change some of the ingredients to make it even more simple to make.
After many trail and arrows I finally got a really great result.
All you need to do is:
In a small bowl mix 2 tbsp of psyllium husk fiber with 8 oz of water.
Set aside while mixing the rest.
2 cups of chickpea flour
1/2 walnut or pecan nut pieces (1 cup if they are whole)
1 tsp with top baking soda
1 tsp with top baking powder
6 oz of water
2 tbsp of olive oil
1 tbs of Himalayan salt
Mix everything in your mixer, then add the psyllium husk little by little. I you feel like the dough is too dry you can add a little more water.
Keep mixing for a couple minutes. The finished result is more to the dry side.
Add the mix to a parchment paper lined bread pan. With wet hands, clap on top of the bread until there is no more air pockets in the dough.
Bake at 400 for 50-60 minutes
