During the winter I love soups of all kinds. I always make them with chicken broth as base.
However, I don’t like the store bought broth, so every time we grill or roast a whole chicken, I always save the caucus to make my own broth.
There is not a whole lot of ingredients in this broth, as I like to add the flavor when using it.
Place the caucus in the crock pot, and add water until it’s covered.
Let it cook overnight on slow.
The next morning I remove the caucus and poor the broth into 3 cup Mason Jars through a cheese cloth, which gives me a fairly clear broth.
You can easily freeze the jars and use later, if you only fill them to the 3 cup mark.
